Soak a small lemon size tamarind and extract using about one and a half cup water. Place 2 table spoons grated coconut ,1/2 tea spoon sombu/fennel seeds, 1tea spoon Kashmiri chilly powder, 3 sambar onions and 4 garlic pads in a mixie jar and grind it to a fine paste with enough water. Heat 3 table spoons sesame oil/ nallennai in a thick bottom vessel or mann chatty. Add mustard seeds and let it splutter. Add 1 level tea spoon of venthayam/methi seeds 2 red chilies, 1/2 tea spoon cumin , 1/2 tea spoon fennel seeds and a few curry leaves. Fry for a minute and add a few pinches of asafoetida powder. And immediately add some sundaikkai / turkey berry and manathakkali vathal. ( murungaikai and kathirikkai can be used instead of vathal) Fry for a minute and add 10-12 peeled sambar onions and 8-10 garlic pods. Fry until onions turn translucent and add 1 table spoon of sambar powder. Give a quick stir and add 2 medium size ,chopped tomatoes. Sauté until mushy. Add the tamarind water and bring it to boil. Allow it to boil for about 7 minutes and add required amount of salt and 1/4 tea spoon of powdered jaggery. Add the coconut paste now and stir well. Bring it to boil again and add a tea spoon of raw sesame oil /nallennai. If the kuzhambu is too thick add 1/4 cup water. Boil for about 5 more minutes or until you see little oil floating on top. That's all. Serve with rice or dosai

DAILY EATING DOSA AND IDLI BORING FOR MY

DAUGHTERS... WHAT TO DO..... SO MADE A DIFERENT

TYPE OF BUN.... AWWW YUMMY TUMMY FULL

All purpose flour/maida 2 cup
Yeast 1 teaspoon
Sugar 1 teaspoon
Water 4 tbsp
Salt 1/4 teaspoon
Vegetable oil 2 tbsp
Ingredients for the stuffing:
Chili Garlic Dip 2 tbsp
Mozzarella cheese grated 1/2 cup
Capsicum grated 1/4 cup
Carrot grated 1/4 cup
Garlic chopped 1 tbsp
Onion chopped 1
Italian seasoning 1/2 teaspoon
Oregano herbs 1/2 teaspoon

Method:
1. In a small bowl, add lukewarm water, yeast and sugar. Keep it aside for 10 minutes or till the foam floating on the top as shown below in the image. In a broad bowl, add flour, vegetable oil, salt and yeast-sugar mixture.
2. Mix it well. Add a little water at a time and knead the flour well to make the soft and elastic dough.
3. Cover the dough with wet muslin cloth and keep it aside for 1-2 hours or till the dough gets double in the size.
4. Keep all the ingredients ready for stuffing. Grease the baking pan with oil and dust with the flour.
5. Knead the flour again and make a ball. Dust with some flour and roll it into a circle of 10-12 inches in diameter.
6. Apply tomato onion gravy on the rolled dough.(I made the usual tomato onion gravy with garlic)
7. Put carrot, capsicum, cheese, garlic, onion, Italian seasoning, oregano herbs on the rolled dough.
8. Fold it from sideways and then roll it over. This will prevent the filling from coming out from the sides.
9. Put the rolled dough into a greased baking mould. Pre-heat the microwave oven of the convection mode at 170C.
10. Bake it in a pre-heated oven at 170C for 35-40 minutes. Take out the baked bread from the oven, apply some butter and let it cool at the room temperature. Cut it into the slices. Delicious pizza bun is ready to serve

HOW TO MAKE AT HOME....

Raw Rice 2 cups, Sabudana – ½ cup, Chilli pd – 3 tsp, Black Til seeds – 2 tsp, Hing – 1 tsp, Salt to taste

Method : Soak the Rice and Sabudana in water separately for 4/5 hrs. Grind them to a smooth paste. Add salt and keep it in a warm place to ferment over night or for 6/7 hrs.

When ready to make - Take a portion of this batter in another bowl add the chilli pd, hing, black til seeds, and required water and mix well. The consistency should be of little thinner to Dosa Batter.

Keep a vessel with water in which you can place the Thallu Vadam stand. Now pour a spoon full of this batter on the plates of Thallu vadam and spread it over the plate leaving space at the ends . Arrange these plates in the stand and keep it in the vessel with water to cook. It will take 5 mins to cook. Once cooked remove and allow to cool. With the help of knife remove each of the vadam from the plates and keep it in another plate. Drizzle Til oil over and serve hot .

Note : I have used white til seeds as I donot like the taste of black til seeds.
